🔪 How It Comes Together
1. Steam the rice. Rinse basmati under cold water until it runs clear. Combine with filtered water, sea salt, and olive oil, bring to a boil, then reduce to low and cover. Simmer 15 to 18 minutes. Let it steam off the heat for 5 more minutes, covered, then fluff with a fork.
2. Roast the pepper. Preheat oven to 375°F. Slice the bell pepper in half lengthwise, remove seeds and membranes, and rub with olive oil and sea salt. Roast cut-side up for 10 to 12 minutes until just softened.
3. Build the protein.
For lamb: Sauté yellow onion in a skillet over medium heat until translucent, about 2 to 3 minutes. Add garlic and cook 30 seconds. Add ground lamb and break into small crumbles until fully browned. Stir in all the spices and lemon zest and cook one minute to bloom them. Remove from heat and fold in fresh parsley.
For chickpea crumble: Pulse chickpeas with onion, garlic, and spices until coarse and sandy, not paste. Stir in parsley and olive oil, spread on a parchment-lined baking sheet, and bake at 400°F for 15 to 18 minutes, stirring once, until the edges are golden.
4. Build the filling.
Lamb: Add spinach to the lamb skillet and cook until just wilted. Stir in rice and sun-dried tomatoes until combined and heated through.
Chickpea: Wilt spinach in a skillet over medium heat, then stir in rice, sun-dried tomatoes, and chickpea crumble until everything is hot.
5. Blend the dressing. Combine lemon juice, tahini, water, garlic, cumin, and sea salt in a blender and run until smooth. Add lemon zest and pulse briefly. Pack separately.
6. Assemble. Spoon the filling into the pre-roasted pepper halves and return to the oven. Bake 15 to 20 minutes for lamb, 10 to 12 for chickpea, until the pepper is tender and the filling is hot throughout. Garnish with toasted pine nuts, fresh parsley, and fresh mint. Dressing on the side.
