  • 4 cups Arugula (lightly packed)

  • 1 cup Cooked chickpeas

  • 1 cup Pasture-raised chicken OR crispy tempeh, chopped

  • 2 tbsp Toasted pine nuts

  • 2 tbsp Pistachios (for garnish)

  • ¼–⅓ cup Creamy Basil Pistachio Pesto Dressing

🫙 Creamy Basil Pistachio Pesto Dressing

  • ½ cup Fresh basil leaves, packed

  • 2 tbsp Pistachios

  • 1 tbsp Pine nuts + 1 tbsp Hemp seeds

  • 2 tbsp Raw cashews (soaked for 20 mins if needed)

  • 1 tbsp Lemon juice + 2 tbsp EVOO

  • 2–3 tbsp Water (for consistency)

  • 1 small Garlic clove + Salt/Pepper to taste


🔪 Instructions

  1. Craft the Dressing: Blend all dressing ingredients in a high-speed blender until silk-smooth. Add water 1 tsp at a time until it reaches a rich, pourable consistency. Taste and adjust for brightness (lemon) or salt.

  2. Prep the Base: Divide the arugula between two bowls.

  3. Assemble: Layer each bowl with chickpeas, sun-dried tomatoes, sautéed asparagus, toasted pine nuts, and your protein of choice (chicken or tempeh).

  4. The Final Touch: Drizzle generously with the pesto dressing. For the best flavor profile, let the dressing sit at room temperature for a few minutes before pouring.

  5. Garnish: Top with the extra pistachios for that signature crunch.
