🥬 Crispy Brussels Sprouts

Serves: 4
Time: 30 minutes

Golden, caramelized Brussels sprouts meet a creamy, tangy maple-tahini drizzle — finished with toasted walnuts for crunch. Simple, cozy, and seriously addicting.

Ingredients

Brussels Sprouts:

  • 1 ½ lbs Brussels sprouts, trimmed and halved

  • 2 tbsp extra virgin olive oil

  • Sea salt and black pepper, to taste

  • ¼ cup chopped walnuts, toasted

  • 1 tbsp maple syrup

Instructions

  1. Roast the sprouts: Preheat oven to 425°F. Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 20–25 minutes, until golden and crisp on the edges.

  2. Make the drizzle: In a small bowl, whisk together tahini, maple syrup, vinegar or lemon juice, garlic, and water until smooth and pourable.

  3. Assemble: Toss the warm sprouts with maple syrup, drizzle with the sauce, and top with toasted walnuts before serving.

Tip: These taste best straight out of the oven — the contrast of crispy edges and creamy drizzle is irresistible.
