Cookie Dough Protein Bites

Makes: ~12 balls

Ingredients

  • ½ cup nut butter of choice (peanut, almond, cashew)
  • ⅓ cup protein powder of choice (vanilla or chocolate works best)
  • ¼ cup gluten-free flour (oat flour for soft texture, almond flour for richer taste)
  • 2–3 Tbsp honey or maple syrup (adjust for sweetness & binding)
  • 2–3 Tbsp dark chocolate chips or cacao nibs
  • 1/2 Tsp cinnamon
  • Pinch of sea salt

Instructions

  1. Mix wet & dry
    In a medium bowl, stir together nut butter, protein powder, gluten-free flour, and sweetener until a dough forms.
  2. Add chocolate
    Fold in dark chocolate chips or cacao nibs.
  3. Shape
    Roll into 1-inch balls and place on a parchment-lined plate or tray.
  4. Chill
    Refrigerate at least 20–30 minutes to firm up.
  5. Enjoy
    Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage.
